摘 要:虾青素是自然界中分布很广泛的一种叶黄素,具有很强的抗氧化作用和独特的生理功能,存在巨大的商业价值。从甲壳类动物加工下脚料中提取回收虾青素是虾青素生产的重要途径之一。简述了虾青素的结构、生物活性及应用的一些最新研究成果,探讨了从虾壳中提取虾青素的方法,介绍了碱提法、油溶法、有机溶剂法和超临界CO2萃取法。Astaxanthin is a lutein distributed widely in the nature with strong antioxidation and unique physiological functions. Astaxanthin has huge commercial value. Extracting astaxanthin from the crustacean waste is one of the important sources for astaxanthin production. This review briefly outlined the latest research resuits regarding the structure, biological activity and applications of astaxanthin, and discussed the method for extracting astaxanthin from shrimp shell. The extraction methods covering ~ extraction by alkali" ," extraction via oil solublization", " extraction by organic solvent" and " supercritical CO2 extraction" were introduced.
