摘 要:目的:建立测定啤酒中微量甲醛的新方法。方法:采用蒸馏法将啤酒中微量甲醛分离出来,甲醛与酚试剂反应生成吖嗪,吖嗪在酸性溶液中被高铁离子氧化形成蓝绿色化合物,根据颜色深浅,比色测定。结果:线性范围在0.0~3.2 mg/L,相关系数r=0.9998;相对标准偏差≤4.3%;加标回收率在91.3%~96.9%;在本文实验条件下,二氧化硫等干扰得以消除,样品测定结果与国标方法测定结果的差异无显著性。结论:该法操作简单,灵敏度高,定量准确,适合啤酒中微量甲醛的测定。Objective: To establish a new method for determination of trace formaldehyde in beer. Methods: Formaldehyde was dissociated from beer via distillation method, and then reacted with phenol reagent to obtain azine. Aziue was oxidized by high - valence iron ions to form blue - green compounds in acid solution. Colorimetric determination was carried out according to the color differences. Results:The method was proved to be linear in the range of 0. 0 ~ 3.2 mg/L,linear regression coefficient was equal to 0. 9998, relative standard deviation was no more than 4. 3% , and standard - weight recoveries were between 91.3 % and 96. 9%. Interferences from sulfur dioxide and so on were eliminated in the test. The results were similar to those from national standard method. Conclusion: The method is simple, sensitive and accurate and it is suitable for detection of trace formaldehyde in beer.
