摘  要:通过单因素试验和正交试验,探讨了基尾虾虾壳甲壳素提取过程中不同反应条件对脱除虾壳所含蛋白质和无机盐的影响.结果表明:虾壳中蛋白质脱除的最佳试验条件为8%NaOH、反应时间1 h、反应温度90℃;无机盐脱除的最佳试验条件为1.0 mol/L的HC l溶液、50℃下反应1 h;甲壳素脱色采用10%过氧化氢溶液在80℃水浴中浸泡2 h.在最佳提取工艺下制备的甲壳素产品氮含量为6.7%、灰分含量为1.2%、水分含量为4.0%、脱乙酰度为10%,产品得率为18.2%.The respond condition of deproteinization and deminerazation was discussed by the single factor test and orthogonal test to choose the optimum extraction craft from cocktail-shrimp hull. Deproteinization and deminerazation were applied in turn in the isolation of chitin. The experiment result showed that the concentration of NaOH, the temperature and the time of reaction were significant factors for the removal of proteins with 8% NaOH at 90℃ for lh of the most suitable for deproteinization. The HCl concentration and the reaction time considerably affecting the removal of inorganic salts, at 50 ℃ , 1.0 mol/L HCl for 1 h of the most suitable for deminerazation. The chitin takes off the color by adopting 10% H2O2 to soak in 80℃ water bath for 2 hours. The measure result suggested the chitin product with 6.7% nitrogen content, 1.2% ash content, 4.0% humidity content, 10% deacetylation degree. The production rate of chitin is 18.2%.
