摘  要:为延长草莓贮藏保鲜期,利用自制通风预冷试验平台,研究影响草莓预冷时间的因素,归纳出预测预冷过程的数学模型。结果表明:通风风速、果实初温、果实大小对草莓的预冷时间影响显著;草莓的合理通风风速为1.1m/s左右。数学模型与实测值吻合较好。In order to prohmg storage and fresh -keeping times of the strawberry,the effects of flow rate, initial temperature and fruit size on pre - cooling time of the strawberry was studied on a experimental equipment based on forced-air pre -cooling, and a mathematical model was established which could be used for predicting strawberry pre - cooling time. The results showed that pre - cooling time was controllod by flow rate, initial temperature and fruit size, the optimal flow rate was 1.1 m/s. Compared with the theoretical model, the experimental results was good agree with the theoretic model.
