摘  要:从辣椒粉中提取辣椒素,对比研究了乙醇提取和氢氧化钠溶液提取方法,优化了提取工艺和色辣分离工艺。测定了大孔树脂和强碱离子交换纤维对辣椒素溶液的饱和吸附量。建立了用来对辣椒素样品中辣椒碱和二氢辣椒碱的含量进行快速分析的高效液相色谱分析方法,并对市售5个辣椒素产品进行了分析测试。结果表明,采用95%乙醇提取的方法提取效率高,操作简单,具有工业应用价值。采用0.4%的NaOH溶液溶解,正己烷两次萃取的工艺能够实现色辣分离,工艺流程简单,分离时间短,辣椒素粗品纯度为74.61%。强碱离子交换纤维对辣椒素的饱和吸附量达到70.31 mg/g,吸附速度快,适合作为辣椒素提纯的吸附材料。所建立的分析方法快捷准确,重复性好。Two methods were used to extract capsaicin from dry chilli pepper. The optimum technology conditions were found. The saturation adsorbing capacity of macroporous resin and an alkali ion exchange fiber to capsaicin was studied. A method for analysis of capsaicin by high performance liquid chromatography (HPLC) was developed and used to test five capsaicin samples. Results showed that it was efficient and valuable for industry application to extract capsaicin by using 95% alcohol solution. Technology of solving capsaicin by 0.4% sodium hydrate solution and extracting twice by hexane could well actualize the disjunction of capsaicin and capsicum pigment. Purity of capsaicin which was extracted by the above - mentioned optimum technology was 74.61%. The saturation adsorbing capacity of the akali ion exchange fiber to capsaicin was 70.31 mg/g, and high adsorption rate of the alkali ion exchange fiber was suitable for purifying capsaicin. The analysis method was simple and useful, and had good repeatability.
