摘  要:细菌毒素氧化呈色法和过氧化物酶法都是检验病害猪肉的常规检验方法。采集病害猪肉和健康猪肉各30份,通过对健康猪肉和病死猪肉同时用过氧化物酶法和细菌内毒素呈色法进行检测,比较两种方法的准确性、精确度及适用性。结果表明,细菌毒素氧化呈色法和过氧化物酶法检验病害猪肉都有很高的检出率,达到了100%。检验市场上购买的健康猪肉时,过氧化物酶法优于细菌毒素氧化呈色法。Colorimetric method of bacterial toxins and peroxide enzyme are conventional methods for testing disease pork.30 pieces of diseased and healthy pork were collected and tested with,peroxide and bacterial toxin enzymatic colorimetric methods to compae the accuracy,precision and applicability in both methods.The results showed that both colorimetric method of bacterial toxins and peroxide enzyme had high detection rate in testing disease pork,100% positive detection rate were presentated.To test the healthy pork bought from market,peroxide enzyme is better than colorimetric method of bacterial toxins.
