不同抗氧化剂对裂殖壶菌菌粉抗氧化的研究

摘  要:针对裂殖壶菌菌粉生产、加工、储存和运输过程中易被氧化的问题,选用3种抗氧化剂—维生素C(V_C)、维生素E (V_E)和特丁基对苯二酚(TBHQ)对裂殖壶菌菌粉进行了抗氧化研究。将菌粉在避光和温度25℃条件下储存,测试抗氧化值(POV),比较分析抗氧化效果并筛选最佳抗氧化剂组合。进而在60,70,80和90℃高温下,对裂殖壶菌菌粉的抗氧化研究。结果表明:V_C、V_E和TBHQ的添加量分别为2.0,1.0和0.1 mg·g^(-1)时,经过8个月菌粉没有被氧化,是对裂殖壶菌菌粉抗氧化的最佳组合。In order to prevent oxidation of dried cells of Schizochytrium limacinum during production,pro- cess and transportation and prolong the storage period,three antioxidants—Vitamin C,Vitamin E and TBHQ were added into dried cells of Schizochytrium limacinum at 25℃in the dark.According to the change of the POV and the effects of the three antioxidants on the dried cells of Schizochytrium limacinum,the optimal combination of antioxdants was chosen in the antioxidation experiment.The results showed that the optimal combination of Vc,VE and TBHQ on dried cells of Schizochytrium limacinum was identified as 2.0,1.0 and 0.1 mg·g^(-1).We found that the dried cells of Schizochytrium limacinum were not oxidized within 8 months after V_C,V_E and TBHQ were added to them.
