摘  要:对云南野生菌(青头菌)的辐射保藏技术进行了研究.结果表明:青头菌采用开孔聚乙烯薄膜(开2个直径为 10 mm的孔)包装,辐射剂量为 0. 75~1. 25 kGy时,在室温下贮存 6 d仍符合鲜品标准;随着辐射剂量的增加,菌的开伞率、腐烂率及褐交率得到明显的抑制.但辐射异味却逐渐增强;青头菌产生辐射味的阈值剂量为 1.63 kGy。Radiative preservation technique on wild edible mushroom from Yunnan (Russula virescens) was studied. The results showed that: Under the condition of given 0.75--1. 25 kGy radiation and packed with polyethylene plastic film Which has two gas-permeable windows (10 mm in diameter), Russula virescens could be preserved for 6 days at room temperature in summer and their quality were still better. With the increasing of radiation dose, the open veil rate, rotten rate and browning rate were significantly controlled, but radiative flavor gradually intensified, the threshold dose radiative flavor induced was 1. 63 kGy.
