摘 要:目的:研究高效液相色谱法检测淀粉类食品中的丙烯酰胺。方法:用纯水提取食品中丙烯酰胺,经化学净化、固相萃取对样品液进行纯化,高效液相色谱法测定。结果:丙烯酰胺在0.02-10.00μg/ml浓度范围内线性良好,相关系数r=0.9993,方法的检测限为0.005μg/ml,样品加标回收率为87.1%-102.2%,样品测定值日内相对标准偏差(RSD)(n=5)为1.45%,日间相对标准偏差(RSD)(n=5)为1.63%。结论:该方法测定食品中丙烯酰胺具有操作简单、干扰少、快速、准确可靠等特点,可以用于大量样品的丙烯酰胺测定。Objective:To study the method for determination of acrylamide in starch food by high performance liquid chromatography. Methods:Acrylamide in food was extracted by water, purified by solid phase extraction, then detected by high performance liquid chromatography. Results :The calibration curve was linear in the ranges of 0. 02 -10.00 μg/ml, the detection limit was 0. 005 μg/ml. The recoveries were 87.1% - 102.2%. The RSD of inter - day and intra - day precisions was 1.45% and 1.63%, respectively. Conclusion :The method for determination of acrylamide in starch food is simple, easy to operate, less interfered, accurate and can be used in research of acrylamide in foodstuff.
