摘  要:目的:了解绍兴市动物源性食品重金属污染状况,为减少食品污染提供科学依据。方法:参照建立全国食品污染物监测系统和全球食品污染物监测规划(GEMS/FOOD)中推荐监测项目,对绍兴市动物源性食品肉及肉制品、蛋及蛋制品、奶及奶制品、水产品、蜂蜜制品五大类24种食品1430份样品进行了铅、镉、汞、砷、无机砷的监测。结果:绍兴市动物源性食品中铅、镉、汞、无机砷、砷的检出率分别是79.5%、79.5%、41.1%、18.1%和33.0%。对照国家标准被检食品中铅、镉、汞、无机砷、砷的合格率(标化后)分别是98.5%、97.7%、100%、99.8%和100%。对照国际食品法典委员会(CAC)标准被检食品中铅、镉、汞、无机砷的合格率(标化后)分别是97.8%、96.9%、98.6%和99.5%。铅超国标较严重的食品是酱鸭,超标率15.7%;镉超国标较严重的食品是海水蟹,超标率33.3%;汞超CAC标准较严重的食品是海水虾,超标率10.0%。结论:绍兴市动物源性食品重金属污染状况总体较好。但要加强监督力度,尤其是集贸市场、个体商贩、小加工作坊的监督。Objective :To investigate the heavy metal in food of animal origin to reduce food pollution and provide scientific basis. netholds: In the light of the establishment of the national food pollutant monitoring system to monitor pollution and global food planning (GEMS/FOOD) recommended monitoring of the project, four kinds of heavy metals including Pb,Cd,Hg,Sn and inorganic arsenic in top - five types foods of Shaoxing animal origin food were monitored. The five types of foods include meat and meat products, eggs and egg products, milk and milk products, aquatic products and honey products. There are 24 types foodstuffs, 1430 samples altogether. Results: The detection rate of Pb, Cd, Hg, Sn and inorganic arsenic in Shaoxing food of animal origin is 79. 5%, 79. 5%, 41.1%, 33.0% and 18. 1%. The passing rate (after S) of Pb,Cd,Hg,Sn and inorganic arsenic comparing the National Institute standards is 98.5% and 97.7%, 100% ,100% and 99. 8%. The passing rate (after S) of Pb,Cd,Hg and inorganic arsenic comparing the International Codex Alimentarius Commission (CAC) standards is 97.8% and 96.9%, 98.6% and 99. 5%. Pb in the sauce duck and Cd in the sea crabs are serious, exceeded the GB standards by 15.7% and 33. 3%, Hg in the sea water shrimp is also serious, exceeded the CAC standards by 10.0%. Conclusion:The pollution of heavy metal in Shaoxing food of animal origin is not serious. However, to strengthen supervision in particular country markets, individual traders and small workshops is necessary.
