摘 要:从陈化的香根鸢尾根状茎干片中分离得到25株真菌,以固态发酵培养真菌,发酵提取物采用GC/MS分析。结果表明:一株真菌(YW-29)能发酵新鲜香根鸢尾根状茎产鸢尾香料,其净油主要香气成分鸢尾酮含量为3.87%。经鉴定,该真菌为米根霉(Rhizopus oryzae)。因此,利用真菌发酵新鲜香根鸢尾根状茎产鸢尾香料是可能的。25 strains of fungus were isolated from the slice of dry aged iris rhizomes. The fungi were cultured by solid-state fermentation, and the fermentive extraction was analyzed by GC/MS. The results showed that one of the strains, YW-29, has the ability of producing iris spice via fermenting the fresh rhizomes of Iris pallida. The irone content in the absolute oil is 3.87% , which is the main aromatic component. The fungus YW-29 is identified as Rhizopus oryzae. This finding proves that it is possible to produce iris spice from the fresh rhizomes of Iris paUida via fungus fermentation.
