摘  要:通过DPPH法测定12个不同肉色(白色,黄色,橘色和紫色)甘薯品种的抗氧化性AE值(干重)。结果表明:抗氧化活性Ayamurasaki(紫肉)最高(AE=3.333)和栗子香(白肉)最低(AE=0.029).AE值与维生素C含量弱负相关性(r=-0.162),与总黄酮、花青素、胡萝卜素、总酚都呈极显著相关性(r分别为0.900、0.925、0.957、0.972,P〈0.01),其中总酚含量(4.59-64.84 mg GA/g)与AE相关性最好,故总酚含量可以作为评价甘薯品种抗氧化性指标。Antioxidation activity values (AE/dw) of 12 sweet potato genotypes with different flesh color (white, yellow, orange and purple) were measured by 2,2- diphenyl- 1 - picrylhydrazyl (DPPH). Results show that the antioxidation activity is highest (AE = 3.333) for Ayamurasaki with purple flesh and lowest (AE = 0.029) for Lizixiang with white flesh. AE value is poorly correlative with the VC content of sweet potato(r = 0. 162), but is significantly correlative with the contents of total anthocyanin, total phenolic, total carotene, and total flavonoi of sweet potato (r = 0.900, 0.925, 0.957, 0.972, respectively, P 〈 0.01 ), and most correlative with total phenolic content ( content range of 4.59 - 64.84 mg GA/g dw). Therefore, total phenolic content can serve as a useful indicator for the antioxidaion activity of sweet potato.
