摘  要:用导数-比导数紫外分光光度法同时测定肉制品中硝酸根和亚硝酸根的含量,测定的回收率及精密度均较高,二者的浓度范围分别在0~10mg/L和0~9mg/L之内符合线性关系,回归相关系数r均达到0.999以上,并将该法应用于肉制品中硝酸根和亚硝酸根含量的实际测定,结果可靠、准确。Measuring nitrite and nitrate content whose spectrums are overlapped badly in admixture, by derivative -ratio derivative spectrum method, is proposed. The results indicate that their concentration ranging from 0 - 10mg/Land 0 - 9mg/L are indirect proportion to their values of derivative - ratio derivative spectra without any separations or camouflages. The correlative coefficient " r" is above 0.999. The results of recovery rate and the RSD tests are both satisfactory. This method is applied to the measurement of nitrite and nitrate in meat products. The results are satisfactory.
