摘　　要：利用KXL-1010控温消解炉、KDY9810型凯氏定氮仪和ZDG-3D全自动电位滴定仪，建立粮食中蛋白质含量的测定方法，并与国标法测定结果比对。实验结果表明，仪器法具有操作简单、试剂用量少、消解快速、准确度高等特点，尤其适用学生课堂教学实验。A method was developed for the determination of protein concentration in food by using controlled temperature digestion furnace （KXL 1010）, kjeldahl apparatus （KDY 9810） and autopotentiometric titrator （ZDG-3D）. Compared with the results obtained from GB/T5009.5 2003, the results indicate that the instrumental method has some advantages, including simple operation, little reagents, rapid digestion and high precision. The teaching experiment method is particularly suitable for the student in the classroom.
