摘　　要：分析测定饲养中国大鲵肝脏与肌肉中的几种重要脂肪酸含量,发现其中必需脂肪酸含量高,DHA含量丰富,证明大鲵具有很高的食用价值。The essential fatty acid was analyzed by GC, which was abstracted from andrias davidianus＇liver and muscle. The results showed that the content of essential fatty acid in the liver and muscle is high, and the DHA is rich. It proved that the nutritious value of andrias davidianus is very favorable.
