摘　　要：文章对影响厚层通风制曲的因素进行了详细的分析,提出了保证成曲质量的方法。对生产中异常现象进行了详细阐述,并提出了改进措施。In this paper , it has analyzed the impact factors of the thick ventilative cultivation in detail , and proposed the way of assuring the quality of koji . It has carried on the full proof to the abnormal phenomena of producing koji , and proposed improvement measures.
