摘　　要：保障猪肉质量安全是优质猪肉供应链建设管理的目标,也是消费者对猪肉及其产品的基本要求。作为优质猪肉供应链的核心企业,屠宰加工企业的质量安全控制能力是决定猪肉质量安全的关键。文章从优质猪肉质量评价指标体系及其影响因素入手,着重论述了屠宰加工企业质量安全控制能力的概念、含义和构成,阐明了屠宰加工企业质量安全控制能力的作用机制。Ensuring the pork＇s quality and safety is the object of the high quality pork supply chain, and it is also the customer＇s basic request of pork and its by-products. As the core enterprise in the high quality pork supply chain, the pork slaughterhouse＇s quality and safety control ability is the key of pork quality and safety. This paper started from the high quality pork quality evaluation index system and its influencing factors, and focusing on the concept and meaning of this control ability, and then analyze the structure and mechanism of the pork slaughterhouse＇s quality safety control ability.
