摘  要:目的:对紫苏子[Perilafrutescens(L.)Brit.]油进行脂肪酸组成的分析。方法:先将样品进行皂化、甲酯化处理,再应用气相色谱质谱联用法(GCMS)分析。结果:共鉴定出6种脂肪酸,分别是软脂酸、亚油酸、α亚麻酸、硬脂酸、花生一烯酸、花生酸,并求出各种脂肪酸的相对含量。结论:在6种脂肪酸中,α亚麻酸占84.50%。OBJECTIVE: To analyse the fatty acids of the Perilla frutescens seed oil. METHOD: The oil was saponificated and modified to methyle esters first, then it was determined the fatty acids by using gas chromatography mass spectrometry. RESULTS: 6 Fatty acids were found in it. They were palmitic acid, linoleic acid, α linolenic acid, stearic acid, eicosenoic acid, and arachidic acid. Their relative contents were measured. CONCLUSION: The content of α linolenic acid was 84.50%, higher than the other five fatty acids.
