洪山鸡肌肉脂肪酸组成分析

摘　　要：通过对洪山鸡肉质脂肪酸进行含量分析,结果发现,洪山鸡肌肉中脂肪酸的组成以油酸、亚油酸、棕榈酸和硬脂酸为主,且以不饱和脂肪酸(USFA)占主体。在放养状态下,洪山鸡公鸡和母鸡之间除单不饱和脂肪酸(MUFA)外,各类脂肪酸的含量均不存在显著性差异;在洪山鸡母鸡中,放养状态下的肌肉中,多不饱和脂肪酸(PUFA)和必需脂肪酸(EFA)的含量显著高于笼养状态下的,而其他肌肉脂肪酸之间差异不显著(P>0.05);同在笼养状态下,洪山鸡母鸡腿肌和胸肌中的必需脂肪酸含量均显著高于岭南黄母鸡(P<0.05);放养洪山鸡公鸡和放养洪山鸡母鸡在腿肌和胸肌间,其多不饱和脂肪酸和必需脂肪酸的含量均存在显著性差异(P<0.05),且腿肌高于胸肌。The muscle fatty acid content of the Hongshan chicken was determined. The results showed that oleic acid, linoleic acid, palmitic acid and stearic acid were the most of the muscle fatty acid composition and the unsaturated fatty acids （USFA） was the main part. Under the stocking model, between the male and the female of the Hongshan chicken, the fatty acid content of all kinds except monounsaturated fatty acids （MUFA） had no significant difference. In the Hongshan hen, the content of Polyunsaturated fatty acids （PUFA） and essential fatty acids （EFA） in stocking model was signigicantly higher than that in captivity conditions （P〈0.05）, other fatty acids content had not significant difference （P〈0.05）. In capitivity conditions, EFA content of leg muscle and chest muscle of the Hongshan hen was significantly higher than that of lingnan yellow hen （P〈0.05）. Four types of samples, the content of PUFA and EFA in the leg muscle of the cage Hongshan hen or the Hongshan stocking hen were significantly higher than that in the chest muscle （P〈0.05）.
