摘 要:采用分光光度法探讨了纯化的紫荆花红色素的稳定性和理化性质。结果表明,紫荆花红色素属花色苷类,最大吸收波长为526 nm,易溶于水等极性溶剂,不溶于石油醚等非极性溶剂。红色素水溶液颜色随pH变化而变化,在酸性条件下呈红色,pH>10时呈褐色。色素耐光性、耐热性较好,苯甲酸钠、蔗糖、抗坏血酸、苹果酸、柠檬酸等添加剂对其影响较小,H2O2、Na2SO3对色素有一定的破坏作用。金属离子Na+、Mg2+、Zn2+、Al3+对色素稳定性无影响,Cu2+、Fe2+对色素影响较小,Fe3+可使紫荆花红色素变为褐色,因此应避免与Fe3+接触或共存。The stability and chemical and physical properties of prepared red pigment from flowers of Cercis chinensis Bge. were studied by WFZ UV-2100 ultraviolet-visible spectrophotometer. The red pigment melts in water, alcohol,acetone and other polar solvents freely, not dissoluble in petroleum ether and other non-polar solvents. Its maximum absorption wavelength was at 526 nm(0.1%HCl). Its absorbance peak was changed under different pH values,it was red in acidic solutions,and brown in pH〉10. It was sensitive to H2O2, Na2SO3, and was stable to light, heat, sodium benzoie acid, su- crose, vC , Na+ , Mg2+ , Zn2+ and Al3+ , Fe2+ and Cu2+ can protect the extraeted colorant, Fe3+ makes it brown.
