摘　　要：以河北沧州为代表地区,调查研究了北方部分火锅菜硝酸盐污染状况,分析了硝酸盐积累的主要原因,给消费者提供了一些合理的消费建议,为生产者降低火锅菜硝酸盐含量,提供了可行的生产技术措施。This article took the Hebei Cangzhou as represented area,the investigaed and studied north partial fire teasel nitrate pollution condition,analyzed the primary cause which the nitrate accumulated,provided some reasonable expenses to the consumer to suggest,reduced the fire teasel nitric acid salt content for the producer,provided the feasible production technical measure.
