摘  要:对DNS法测定红枣总糖的各影响因素进行探讨,确定最佳条件为:检测波长500nm,显色剂用量1~5mL,沸水浴中保持5min,盐酸浓度为1mol·L^-1,红枣总糖含量19.56%。The optimum determination conditions of total sugar from red dates by 3,5-dinitrosalicylic acid colorimetry were studied. The effect of wavelength, developer dosage, coloring time and the concentration of hydrochloric acid on the result were discussed and the optimum conditions were as followed: detection wavelength was at 500nm, developer dosage 1-5 mL, boiling water bath 5 min and the concentration of hydrochloric acid lmol/L. The total sugar extracted from red dates was 19.56 %.
