摘  要:γ-谷氨酰转肽酶是广泛存在于生物体内,参与谷胱甘肽循环和氨基酸跨膜转运的异二聚体酶,它能专一性地催化γ-谷氨酰基的转移,具有转肽、自转肽、水解3种催化作用。随着生物技术的发展,γ-GTP酶的应用在生物催化方面开始备受关注,利用其对谷氨酰基的催化水解和转肽特性可以催化合成多种γ-谷氨酰化合物,如改善了苦味的L-γ-谷氨酰-缬氨酸,增强了水溶性的L-γ-谷氨酰-胱氨酸,具有生物学活性的茶氨酸,这使得γ-GTP酶在生物医药、保健品及食品生产工业方面具有很好的发展应用前景。γ-glutamyhranspeptidase (γ-GTP) ,a heterodimeric enzyme, presents in living organisms widely and plays a key role in the glutathione cycle and the transmembrane pathway of amino acid. This enzyme can catalyze transfer of the γ-glutamyl moiety specifically and exhibit different reaction in different conditions, including transpeptidation, autotranspeptidation and hydrolysis. As well known, γ-GTP is often be used to detect diseases of livers and gallbladders in clinical. Now, with the development of biotechnology, the application of γ-GTP in bio-catalysis has drawn greater attention. It can synthesize various γ-glutamyl compounds, such as the L-γ-glutamyl-valine, improve its bitter taste, enhanced solubility of the L-γ-glutamyl-cystine, and increased theanine of biological activity. Thus γ-GTP has great potential in biomedicine, healthcare products and food production application.
