摘 要:试验研究了不同饲养方式对卢氏鸡肌肉品质的影响。结果表明:放养组胸肌的系水力、剪切力、粗脂肪均高于笼养组,但差异不显著(P>0.05);放养组胸肌粗蛋白含量显著高于笼养组(P<0.05)。肌肉游离氨基酸总含量、必需氨基酸含量和呈味氨基酸含量均为笼养组高于放养组,而必需氨基酸所占总氨基酸的比例和呈味氨基酸所占总氨基酸的比例均表现出放养组高于笼养组的趋势。the effects of different feeding manners on the meat quality of Lushi gated in this study. The results revealed that feeding manners had no impact on Chickens were investidrip loss rate , cooking loss rate, shear stress ,ether extract ( P 〉 0. 05 ),but feeding manners had a significant impact on crude protein ( P 〈 0. 05 ). the total amino acid content,essential amino acid content,flavor amino acid content of caged chickens were higher than that of free-range chickens,the portion of essential amino acid and flavor amino acid in the total amino acide of free-range chickens were higher than that shown by the trend of caged chickens.
