摘 要:[目的]了解九江市餐饮业食品卫生现状,分析与评价实施量化分级管理评分情况,发现在实施量化分级管理过程中存在的不足,提出管理对策。[方法]采用普查方法,得出2006~2007年各季度全市餐饮单位的卫生许可情况及分级量化结果,分析其现状和未来走势。[结果]九江市2年间获得许可的餐饮单位从2520个猛增到4766个,但小型单位一直占据80%左右,而其2007年底卫生量化等级几乎全为C或D,其余20%大中型单位等级多为B和C,A仍只占1.2%。[结论]九江市餐饮单位数量逐年上升,且主要来自小型餐饮单位的快速增加,他们也是分级量化管理实施的难点,表现为低评级的数量和比例最多。今后工作应着重于引导他们自觉改良卫生情况,提高评估等级,同时加大对消费者的宣传。[Objective] To investigate the hygiene situation of food industry in Jiujiang; to analyze and assess the execution of Quantitative Grade Administration of Food Hygiene; to find the improvements and defects during the execution; to give suggestions on supervision strategy for next year. [Methods] General survey was made and data on Quantitative Grade Administration of Food Hygiene were collected for every quarter of 2006-2007. [ Results] From 2006 to 2007, the number of licensed food-supplying units had almost doubled. Among all units (4 766, 4th quarter in 2007), small ones had a proportion above 80%. They majorly belonged to C and D grade hygiene grade. The rest 20% middle-large units majorly (78.3%) belonged to hygiene B and C grade. Only 10 got A (1.2%). [ Conclusion] Food industry is getting bigger and bigger in Jiujiang these years. But the majority is small units with poor hygiene condition, probably due to less knowledge, suboptimal hardware, and ignorance of the laws. The Middle-large units are better but still sub-optimal. In future, more efforts should be made in food supervision, especially the propagation of Quantitative Grade Administration of Food Hygiene, both among food-supplying units and customers.
