摘 要:为探索水杨酸(SA)处理对板栗贮藏品质的影响,以"镇安"红栗为试验材料,采用不同浓度水杨酸水浴处理10 h,于0℃±1℃条件下贮藏,对板栗贮藏过程的腐烂率、水分含量、淀粉、还原糖、可溶性糖、可溶性蛋白质和Vc含量变化进行研究。结果表明:SA水浴处理可以极显著降低板栗贮藏的腐烂率。1 mmol.L-1SA水浴处理能有效保持板栗贮藏期间的水分、Vc和可溶性蛋白质的含量,降低淀粉和还原糖的降解速率,在一定程度上抑制板栗品质的降低。The impact of salicylic acid (SA) water-curing treatment on the fruit quality of chestnut (Castanea rnollissirna ) during storage was investigated. The fruits were treated by different concentrations of SA by water-curing for 10 h, and stored at 0℃±1℃, RH 65%-85%. Changes of rotten rate, contents of moisture, starch, sugar, soluble protein, and Vc content were measured during the storage. The results showed that the rotten rate was significantly decreased by SA treatment with the concentration of 1 mmol ·L-1 SA during the storage. The contents of moisture, Vc and soluble protein all were maintained in sta- ble levels. Sugar and starch degradations were effectively inhibited, and hereby the decrease of the fruit quality of chestnut was slowed down to some extent.
