深圳市集中式餐具消毒纳入卫生许可管理的探讨

摘　　要：目的通过对深圳市集中式餐具消毒企业发展现状和卫生状况调查,了解行业主要存在的问题,从国家现行法律、法规、行业发展重要性和技术操作可行性等方面进行探讨,为政府纳入卫生许可及加强管理提供依据。方法现场调查深圳市宝安区餐具集中洗消企业的工艺流程及卫生管理等,并对餐具进行监测。结果300宗消毒餐具经大肠菌群纸片检测的总合格率为88%。结论目前深圳市大部分的集中洗消企业在设施布局及卫生管理等方面仍存在缺陷,政府需将其纳入卫生许可、制定卫生规范并加强监督管理以促进该行业健康发展。Objective Address main problems of the tableware concentrated decontaminating industry by conducting a survey to assess the current status and sanitation of the industry in Shenzhen.Evaluate and observe on the related laws, regional regulations, importance of the industry improvement, technical feasibility etc, provide the basis for the incorporating of sanitation administration permission and strengthen the management. Method Detect the tableware and investigat technic process and management of the tableware concentrated decontaminatingcompanies in Shenzhen Baoan district. Result The eligible rate of tablewareby Coliform paper was 80% out of 300 samples. Conclusion There are limitations of distribution, facilities and management in most of the tableware concentrated decontaminating companies in Shenzhen. It is necessary to incorporate the tableware concentrated decontaminating industry management in sanitation administration permission, establish related regulations and strenthen the management for a heathier development of the industry.
