摘  要:研究了妙峰山玫瑰色素的最佳提取条件及其稳定性。正交试验结果表明:用pH 1.0的30%柠檬酸提取液,以料液比1∶10在60℃时提取1 h,提取效果最佳。稳定性试验结果表明:该色素对光、常用食品添加剂稳定;对热、氧化剂不稳定;不宜采用高温杀菌。The optimum conditions and stability of pigment from rose in Miaofeng mountain were studied.The results of the experiment showed that the optimum extracting conditions were pH 1.0,30% Nitric acid solution at 60℃ for 1 hour with the solid-liquid ratio 1∶10(g/mL).The results also showed that rose pigment kept its stability under the conditions of light and food additives,but it was unstable in the effects of H2O2 or heat,and it wasn't suitable for high-temperature sterilization.
