摘  要:测定几种常见市售营养品、海产品中一些金属元素的含量,为人们选购进补食品提供参考。湿法消化样品,采用火焰原子吸收方法测定各元素的含量,并改进了赶酸方式。实验测定了藕粉、豆粉、芝麻糊、核桃粉、虾皮、海米及干鲜蛤蜊中Ca,Mg,K,Fe,Zn的含量。结果表明:海产品中,虾皮各元素含量较高,其中Ca含量达12 200μg/g;营养品中,豆粉各元素平均含量最高。建议虾皮、豆粉可以作为全面营养品的首选。To provide some references for people purchasing, several kinds of elements of nourishment and marine products were measured. The samples were digested by wet digestion method, and contents of elernents in these samples were measured by flame atomic absorption with the modified method of removing acid. The contents of calcium, magnesium, potassium, iron and zinc in lotus root powder, bean powder, sesame seed paste, walnut meat powder, dried small shrimps, dried shrimps, dried and fresh eonchiglia were determined. Experimental results show that among marine products dried small shrimps have the highest content of calcium which is 12 200μg; bean powder has the highest average level of these elements among nourishment. It suggests that dried small shrimps and bean powder would be the first choice of purchasing nutritious food.
