摘  要:研究了“紫花”芒果(MangiferaindicaL.)的低温冷藏,气调冷藏条件下其活性氧代谢反应。结果表明,后熟过程中,超氧化物歧化酶(SOD)、过氧化物酶(POX)和过氧化氨酶(CAT)的活性呈上升趋势;气调贮藏显著抑制了这三种酶的活性。Changes of SOD, POX and CAT activities during Zihua mango at low-tempera-ture storage and low-temperature controlled atmosphere (CA) storage were studied. The results indicated that during the fruit ripening, activities of superoxide dismutase (SOD),peroxidase (POX), catalase (CAT) were increased, and the activities of three enzymes were suppressed remarkbly under CA storage.
