摘  要:为探究影响可溶性固形物含量(SSC)的密切关系因子,及为高固形物品种的选育和番茄采后加工出高质量的番茄酱产品提供依据,对6个番茄品种果实发育、成熟后贮藏过程中SSC的动态变化及其与其果实指标的相关性进行了分析。结果表明:在影响番茄SSC的各种指标中,品种间差异较大,品种TD41×TD13(X2)SSC最低,品种HT16-①-①-①(X6)SSC最高;在番茄的不同成熟期,SSC先是增加,增加到一定含量时就略有下降,但品种HT16-①-①-①(X6)却是先下降后直线上升,这可能与品种的早熟有关,与田间观察一致。TD13(X3)和HT16-①-①-①(X6)两个番茄品种,在采摘后放置过程中,SSC先降后升,第4d时达到了最高,后基本保持不变,到第9d时SSC又开始下降。番茄SSC与可溶性糖含量呈显著相关,相关系数为0.840;与有机酸含量呈极显著相关,相关系数为0.946;与Vc含量呈极显著相关,相关系数为0.952;与番茄红素含量呈中度正相关,相关系数为0.545;与单果重呈轻度负线性相关,相关性系数为-0.140;与果型指数也呈轻度负线性相关,相关性系数仅为-0.077。In order to find the tight related factors that contribute to the SSC,to provide proof for the choosing and cultivating of tomatoes and the producing high-quality tomato jam products, our experiment chooses six types of tomatoes to seek the relations between tomatoes, ssc and other fruit indication, through two processes of fruit developing periods and fruit storage time. The outcome shows that varieties is the most important. In all the effects that influence soluble solids content (SSC), TD41× TD13 (X2) contains the least SSC while HT16-①-①-①(X6 )contains the most. In the different growing periods of the fruits, SSC increased at first, when it comes to a point, it will decrease, while HT16-①-①-① (X6) decreases at the early stage,then increase to the top,which may be explained by its later maturiaty. In the process of the tomatoes storage,SSC decreases at first then increases slowly. On the fourth day,it reaches the top and keeps steady in the following days,when the ninth day comes,ssc decreases again. Ssc has a significant positive relation with the suluble sugar,Pearson Correlation is 0. 840;a greatly significant positive relation with content of the organic arid,Pearson Correlation is 0. 946 and a greatly significant positive relation with Vc, Pearson Correlation is 0. 952,a positive relation with ycopene when the r value equals 0. 545. But ssc has negative relation with the weight of the every fruit when the r is -0. 140,also a negative relation with the types of the fruit,the r equals -0. 077,the two relations are too light.
