摘　　要：综述了骨素的来源、特性,骨素的提取方法,影响骨素提取的主要因素等,介绍了骨素在食品加工中的应用现状,并展望了骨素产品的开发应用前景。The sources, characteristics, extraction methods and the main factors that affected the extraction of ossein were introduced in this article. And the application status quo of ossein in food processing was summarized, then the development prospect of ossein products was forecasted.
