摘　　要：探讨了高铁还原法测定马铃薯中维生素C含量的方法。结果表明:高铁还原法的平均标准偏差为0.33,平均回收率为99.28%。该方法操作简单、试剂易得、灵敏度高、准确性好,是值得推广的1种测定方法。The determination of vitamin C in potato by the method of high valence iron reduction was discussed. The results showed that the average standard deviation was 0. 33, and the average recovery rate was 99.28%. The method was simple and convenient with high sensitivity and good accuracy, which was worth popularizing.
