摘  要:目的分析羽藻(Bryopsis plumosa)的基本化学组成并对其进行营养学评价。方法使用GC色谱分析羽藻脂肪酸组成,用氨基酸自动分析仪分析其氨基酸构成。结果碳水化合物和蛋白质是羽藻的主要成分,两者共占藻体干重的72.5%,其中碳水化合物占藻体干重的40.0%,蛋白质占32.5%,必需氨基酸丰富,占氨基酸总量的45.3%,氨基酸评分69,限制氨基酸为蛋氨酸和胱氨酸;脂肪含量较低,占4.36%,不饱和脂肪酸含量高,占脂肪酸的66.9%。结论羽藻是一种高蛋白、低脂肪的天然理想保健食品原料。Objective To study common chemical constituents of Bryopsis plumose and its nutrition evaluation. Methods The constituents of fatty acid were analyzed by GC, the constituents of amino acid were analyzed by Amino Acid Analyzer. Results Carbohydrate and crude protein were chief constituents of Bryopsis plumose, which was 72.5 % of the marine algae dry weight. The carbohydrate reached 40.0% , protein was 32.5% , and EAA content was 45.3% of the total AA. The limited amino acids were Met and Cys,and amino acid score was 76. Crude fat content was 4.36% with 66.9% unsaturated fatty acid. Conclusion Bryopsis plumose might be good healthy food materials, which can provide high protein,low fat and calorie.
