摘　　要：基于电阻法测定物料的共晶点和共熔点,设计一个测定电阻装置,对于部分果蔬等物料的共晶点和共熔点进行测定,并对测量的数据进行计算和分析,得出部分物料的共晶点和共熔点参数,为相关果蔬产品的冻干加工提供一定的参考数据。They affected freeze-drying product quality.Eutectic temperature and melting temperature of some fruit and vegetable materials were measured based on electric resistance method.The data were calculated and analyzed to get eutectic temperature and melting temperature of materiel.This research will provide reference to freeze-drying production of fruit and vegetable.
