摘  要:测定红花大金元、翠碧1号、云烟853个品种烟叶在烘烤过程中叶片色素含量变化及失水干燥速率。结果表明:在烘烤过程中,3个品种叶绿素含量、类胡萝卜素含量总体上存在极显著差异。烘烤变黄期色素降解快,定色期降解慢,叶片自由水含量一直在下降,束缚水含量先升高后降低,总水量变黄期失水慢,定色期失水快。叶片中色素的含量在很大程度上决定了烟叶的变黄程度。This paper studied the leaf of Honghuadajinyuan,Cuibiyihao,Yunyan85. We determined the yellowing stage rate,in the content of pigment of leaves and drying rate in the flue-curing process. The results showed that the content of chloro-phyll and carotenoid were very significant difference between the 3 varieties of flue-cured tobacco in the flue-curing process. In the curing process,the contents of pigment were degraded fast in the yellowing stage,but it degraded slowly in the leaf drying stage. The contents of free water were decreased in tobacco leaves during flue-curing all the time,the contents of bound water were increased at first and then decreased. The contents of tissue water lost slowly in the yellowing stage,but it lost quickly in the leaf drying stage. The contents of pigment of tobacco leaves were determined the yellow de-gree of the tobacco.
