摘　　要：提出了快速测定小麦粉中过氧化苯甲酰的方法,根据小麦粉提取液色泽的深浅与其过氧化苯甲酰含量之间的相关性规律,通过肉眼观察提取液色泽的深浅即可快速判断小麦粉中过氧化苯甲酰的大致含量。The method to measure the content of benzoyl peroxide quickly is proposed, according to the correlation law between the color and the content of benzoyl peroxide in wheat extract. Through observing the level of wheat extract color, the content of benzoyl peroxide in wheat extract can be estimated approximately.
