摘 要:研究了光在液态混浊食品介质中的传输过程。首先对光辐射与粒子之间的相互作用过程进行了理论分析。在此基础上,建立了适合测量后向散射系统的光传输的二级散射模型,得到了光信息与物质特性之间的解析关系。为了验证理论模型的应用,以典型混浊液态食品介质全脂牛奶为实验样品,设计了双光纤空间分辨测量系统,在径向距离3~5mm变化的范围内,测量全脂牛奶的后向散射光强随径向距离的变化关系。结果表明,实验测量的结果与模型计算的结果基本一致,证明了模型在实际应用中的合理性。The propagation of light in turbid liquid food systems has been studied. The interaction between light radiation and particles are analyzed theoretically. Based on the analysis, a second-order scattering model is developed to describe the transport of light in backscatter system. The analytical relations between light and matter characters are obtained. In order to validate the application of the theoretical model, the whole milk is selected as a typical turbid liquid food matter. And the backscatter intensities in the milk sample are measured at radial separation distances of 3~5 mm using a designed double-fiber spatial resolution measurement system. The results indicate that experiment has consistent result with model, which prove the feasibility of the model in practice.
