摘 要:目的了解中老年人群锌营养状况及其影响因素,为制定中老年人群营养保健策略提供依据。方法对武汉市某社区41~86岁131位健康人进行问卷调查并检测其血浆锌的水平。结果调查人群的血浆锌为(0.82±0.14)mg/L,男女性血浆锌均值分别为(0.84±0.14)mg/L和(0.79±0.13)mg/L。缺锌发生率为12.2%,男女发生率差异无统计学意义。多元线性逐步回归分析显示,血锌含量与性别、收入,蛋类及豆制品摄入量有关;多元Logistic回归分析表明:缺锌发生的危险因素可能为摄入过多豆制品,而蛋类的摄入增加则为保护因素。结论中老年人群锌缺乏的发生率较高,合理摄入蛋类和豆制品可以预防中老年人群缺锌的发生。Objective To explore plasma zinc level and relevant factors among middle-aged and elderly population,and to provide a scientific basis for making the strategy of nutrition health care for middle-aged and elderly persons.Methods A questionnaire survey was conducted among 131 healthy individuals aged between 41 and 86 years in a community of Wuhan,and their plasma zinc levels were determined.Results The average level of plasma zinc was (0.82±0.14)mg/L.The mean value of plasma zinc for males was (0.84±0.14) mg/L,and the mean value of plasma zinc for females was (0.79±0.13) mg/L.The incidence rate of zinc deficiency was 12.2%,and no statistically significant difference was found between males and females.Multiple linear stepwise regression analysis showed that plasma zinc level was related to gender,income,intake of eggs and soybean products.Multiple Logistic regression analysis showed excessive intake of soybean products was a risk factor of zinc deficiency,while increasing intake of eggs was a protective factor.Conclusions The incidence rate of zinc deficiency is high in the middle-aged and elderly population,and reasonable intake of eggs and soybean products can prevent the occurrence of zinc deficiency among them.
