摘　　要：糯玉米富含支链淀粉、糖、蛋白质、氨基酸、维生素、纤维素、Ca、Fe、P等物质,其煮熟后柔软细腻、甜粘清香、具有独特的风味和极高的食用价值。介绍了糯玉米在国内外种植的现状,综述了糯玉米综合深加工的研究进展,对糯玉米产业化生产的发展提出一些建议,并对其今后的前景进行了展望。Waxy corn was rich in amylopectin, sugar, protein, amino acids, vitamins, fiber, Ca, Fe, P and other substances, cooked soft and delicate, sweet and sticky and fragrant with the unique flavor and high food value.Planting status of waxy corn at home and abroad were described, and the comprehensive deep-processing of waxy corn were generalized and analyzed, development orientation and technics of waxy corn products were proposed, commercial process outlook of waxy corn was also prospected.
