摘 要:TG酶能够催化蛋白质肽键中谷氨酰胺(酰基供体)和赖氨酸中伯胺(酰基受体)之间的酰基转移反应,通过分子间和分子内的ε-(γ-谷氨酸)赖氨酸异肽链桥形成蛋白质交联,使蛋白质的稳定性提高。为了减少羊毛在染色和蛋白酶处理中造成的损伤,应用TG酶对羊毛针织物进行整理,研究TG酶对羊毛纤维损伤的预防和修复作用。结果表明:TG酶能够预防和修复羊毛蛋白酶防缩损伤,顶破强力最大增幅分别为8.17%和8.42%;TG酶能够预防和修复羊毛染色损伤,顶破强力最大增幅分别为8.2%和17.0%。DTA测试结果表明:经TG酶处理后的羊毛纤维的热降解温度提高。Transglutaminases could catalyze an acyl transfer reaction between peptide-bound glutamine(acyl-donor) and lysine primary amine(acyl-acceptor).The crosslinking of proteins via intra or inter ε-(γ-glutamyl) lysine isodipeptide bridges improved protein stability.Wool knitted fabrics were treated with transglutaminase in order to decrease the damage of wool resulting from dyeing and protease treatment.The prevention and remedy effect of transglutaminase on the damage of wool fabric were studied.The results revealed that the transglutaminase could prevent and remediate the damage caused by protease,the bursting strength of the knitted fabric treated with transglutaminase increased by 8.17% and 8.42% respectively.Transglutaminase could also prevent and remediate wool damage caused by dyeing,the bursting strength of the knitted fabric treated with transglutaminase increased by 8.2% and 17.0% respectively.The result of DTA suggested the thermal degradation temperature of wool treated with transglutaminase raised.
