摘　　要：天然色素具有安全无毒、营养、保健等特殊功能,市场需求不断增加。文章从天然色素的生理功能、资源开发和应用方面综述了目前我国天然色素的资源开发和应用研究概况,供相关科技人员参考,以促进天然色素工业的进一步发展。On account of non-toxic,nutrition,health and other special function,the market demand of the Natural Pigments was increasing.The resources development and application of the natural pigments was reviewed such as the physiological function,resources development and its application was given for the relevant scientific researchers personnel reference,to make the progress of the natural pigment industrial.
