摘　　要：采用均匀设计法,研究了6528澄清剂或磷酸用量、pH值、温度、振荡时间等因素对蔗糖分转化率的影响规律。通过回归分析和网格优化法,得到了各因素对蔗糖分转化率影响的数学方程和优化值。分析并比较了6528澄清剂和磷酸对蔗糖分转化率的影响。The effect of the 6528 clarifying agent or phosphoric acid dosage,pH,temperature,vibration time on the conversion rate of sucrose were investigated by uniform design method.The mathematical equations and the optimal value of various factors on the impact of the conversion rate of sucrose were obtained with regression analysis and mesh optimization method. The effects of the 6528 clarifying agent and phosphoric acid on the conversion rate of sucrose were analyzed and compared
