摘 要:通过测定3种瘦肉型猪,即皮特兰、斯格猪、PIC猪的肉质指标,为优质猪肉生产提供理论依据。结果表明:斯格猪和PIC猪肌肉中丙二醛含量较皮特兰猪低(P<0.05);皮特兰猪和斯格猪的总蛋白含量和碱性磷酸酶以及丙氨酸氨基转移酶活性较PIC猪高(P<0.05);斯格猪及PIC猪肌糖原含量较高(P<0.05),乳酸含量较低(P<0.05);综合以上指标,斯格猪肌肉品质最好。Pork indexes of Pietrain,Seghers and PIC pig were determined to compare the meat quality.The results showed that the Malondialdehyde content of Seghers and PIC pig was lower than Pietrain's(P0.05).The Total protein content,Alkaline phosphatase activity and Alanine aminotransferase activity of Pietrain and Seghers were higer than that of PIC(P0.05).The Gycogen content of Seghers was higher than other's(P0.05),while the Lactate dehydrogenase content was lower than other's(P0.05).For meat quality traits,the results showed that the meat of Seghers were better than that of Pietrain and PIC pig.
