摘 要:本文对雌雄细鳞鱼肌肉营养成分进行比较分析。结果表明:雌雄细鳞鱼肌肉的水分(81.27%、79.54%)、粗蛋白含量(13.08%、13.76%),粗脂肪含量(3.73.%、4.09%),灰分含量(1.29%、1.61%)差异不显著(P>0.05);氨基酸总含量(TAA)、必需氨基酸(EAA)总量、呈味氨基酸(DAA)总含量无显著差异(P>0.05);蛋氨酸含量存在显著差异(P<0.05)。雌鱼的EAAI分值(80.69)略低于雄鱼(82.47),雌雄细鳞鱼的大多数必需氨基酸氨基酸分(AAS)和部分化学分(CS)大于1,雌雄细鳞鱼的色氨酸和缬氨酸的AAS、色氨酸和蛋氨酸+胱氨酸的CS最低,而成为各自的限制性氨基酸。雌鱼的饱和脂肪酸(SFA)含量、单不饱和脂肪酸(MUFA)含量略低于雄鱼,而多不饱和脂肪酸(PUFA)略高于后者(P>0.05);雌雄细鳞鱼的C17:1n-9含量存在显著差异(P<0.05)。说明细鳞鱼营养丰富,研究结果为细鳞鱼的开发利用提供参考。Nutrient components in the muscle of male and female Brachymystax lenok were investigated.Sample fish were collected from Hailang River of Mudan River tributaries and Hutou in the upstream of Wusuli River in December of 2006.The results showed that there were no significant differences on the content of moisture ,crude ash ,crude protein and lipid in fresh muscle of B.lenok .Eighteen common amino acids were mensurated in the muscle of B.lenok ,The total content of amino acids(TAA),essential amino acids ,four kinds of delicious amino acids(DAA)of female B.lenok were lower than that of male B.lenok.The essential amino acids index (EAAI)of two sexes were 80.69,82.47 respectively.The Limiting amino acid were Trp and Val in AAS,while Trp and Met + Cys in CS.There was significant differences on the content of Met.9 saturated fatty acids (SFA),12 mono-unsaturated fatty acids (MUFA)and 13 poly unsaturated fatty acids (PUFA)were found in the muscle of male and female Brachymystax lenok,but there were no significant differences between two sexes.There was significant differences on the content of C17:1n9.It was indicated that B.lenok is a nutritive and delicious food fish ,and it could be a potential aquaculture species .
