摘  要:为进一步说明桃果实缝合线过早软化的原因,测定了不同发育时期大久保桃果肉软化果和正常果缝合线部位的蔗糖、葡萄糖、果糖和山梨醇的含量以及蔗糖代谢的相关酶——酸性转化酶、中性转化酶、蔗糖合成酶、蔗糖磷酸合成酶及山梨醇代谢的关键酶山梨醇脱氢酶(SDH)和山梨醇氧化酶(SOX)的酶活性,并对软化果和正常果果实中糖积累与酶活性的关系进行了分析比较,结果表明,糖代谢是影响桃果肉缝合线软化的重要因子之一;软化果在硬核期缝合线果肉快速生长,且糖代谢和相关酶活性都较旺盛,以单糖代谢为主,主要受中性转化酶的调节;果实发育进入阶段Ⅲ时,软化果的糖代谢比正常果的进程和速度都快,此阶段前期软化果的糖代谢快速旺盛,蔗糖快速大量合成,后期糖积累减少且糖含量大幅降低,果实出现未熟缝合线先软的现象。To further explain the peach suture softening, we measured sucrose, glucose, fructose and sorbitol contents in suture site of Okubo peach softening fruit and normal fruit at different fruit development stages. The activity of sugar metabolism related enzymes including acid invertase, neutral invertase, sucrose synthase, sucrose phosphate synthetase, sorbitol oxidase (SOX)and sorbitol dehydrogenase(SDH) which was a key enzyme in sorbitol metabolism were also measured . The relationship between sugar accumulation and enzyme activity was analyzed as well. The results showed that sugar metabolism was one of the important factors that affected peach suture softening; the suture of softening fruit grew fast at the hard-core stage,sugar metabolism and related enzyme activity were much stronger than that in the normal fruit, and monosaccharide metabolism which was mainly regulated by neutral invertase played a key role at this stage; at the stage Ⅲ of fruit development, the process of sugar metabolism of softening fruit was much faster than that of normal fruit, and at the early stage Ⅲ, sugar metabolism in softening fruit was strong with quick sucrose synthesis. While at the later of this stage, the sugar accumulation decreased and the sugar content dropped significantly, and these resulted in suture softening when fruit was immature.
