摘 要:利用自行设计的小型通电加热装置研究了自来水和豆浆在连续通电加热过程中极板的污染问题,对比了镀钛不锈钢极板和"18-8"不锈钢极板的腐蚀情况。结果表明,镀钛不锈钢板的钛层腐蚀较为严重,容易对食品物料产生较为严重的污染;"18-8"不锈钢板具有较好的耐腐蚀性,可用于连续通电加热装置。对豆浆进行连续通电加热时,极板表面出现了豆浆的黏附现象,极板表面腐蚀越严重,则豆浆在极板表面的黏附越严重。实验结果对解决通电加热过程中极板的污染问题,研制实用化的液态食品连续通电加热装置具有一定指导意义。Electrode fouling of tap water and soybean milk was studied with a self-designed minitype continuous ohmic heating device.Compared with "18-8"stainless steel,the erosion of stainless filled with titanium was more severe and polluted foods material very serious."18-8"stainless steel can bear erosion preferable and can be used in continuous ohmic heating apparatus.And attach phenomenon on electrode appeared during experiment with soybean milk.The attach phenomenon was serious when the electrode erosion was more serious.This experimental results can provided some suggestion for the fouling problem as well as developing practical ohmic heating device.
