摘 要:目的了解济宁市熟肉制品卫生状况,为进一步加强卫生监督管理提供科学依据。方法依据国家有关标准,对市售熟肉制品店铺进行全面卫生学调查及随机抽样检验。结果卫生学调查熟肉制品店铺308间,卫生许可证和健康证的持证率都在80%以上,但从业人员卫生、食品消毒、温度控制等方面,合格率均较低(50%以下);熟肉制品专营店、食品超市熟食部及个体食品摊贩按照分层随机抽样312份,总合格率为73.7%。其中4~9月份141份,合格率为64.5%;其余月份171份,合格率为81.3%;理化指标中铅、砷均合格,亚硝酸盐合格率为93.9%;微生物指标中菌落总数合格率为81.7%,大肠菌群合格率为78.5%,未检出致病菌。个体食品摊贩126份,合格率为63.5%,食品超市熟食部77份,合格率79.2%,熟肉制品专营店109份,合格率81.7%,个体摊贩与食品超市、熟食专营样品合格率有显著差异(P<0.05)。结论市售熟肉制品店铺整体卫生状况较差,建议重视卫生宣传,加强监督管理,确保熟肉制品安全卫生。Aim To study the hygienic status of cooked meat products for sale in Jining City and provide scientific basis and feasible countermeasures for hygienic monitoring and management. Methods Butcher stores were investigated thoroughly and samples of cooked' meat were collected randomly and analyzed according to national standards. Results Totally 308 butcher stores and 312 cooked meat products were surveyed. More than 80% stores held valid permits and valid health certificates, while the eligible rates of hygienic status of shop employees ,products disinfection and temperature control were less than 50%.73.7% cooked meat was qualified in a total of 312 samples(64.5% from April to September and 81.3% in the 81.7%,78.5% and 100% respectively. 63.5% samples from 126 street vendors were qualified ,79.2% from 77 food supermarkets and 81.7 from 109 specialists in cooked meat . Eligible rate in street vendors was different from that in food supermarkets and specialists significantly (P〈0.05). Conclusion There are hygienic problems in shops selling cooked meat products.Thus effective measures including improving facilities, strengthening monitoring and hygienic management and publicity should be taken to ensure food safety.
