摘 要:目的:优化淡豆豉的炮制工艺,明确工艺参数,为淡豆豉的规范化生产和质量控制提供依据。方法:采用单因素试验,以淡豆豉中大豆苷元、染料木素和异黄酮的含量为指标,考察桑叶和青蒿用量比例、药汁拌入大豆时的相对密度、蒸煮时间、发酵温度、发酵时间、再闷时间和略蒸时间;采用正交试验,以总黄酮含量为指标,考察桑叶和青蒿煎煮时间、煎煮次数、加水量,从而规范淡豆豉的炮制工艺。结果:最佳炮制工艺为取桑叶90g、青蒿100g,加入约生药量18倍水煎煮3次,每次1h,药液相对密度为1.10~1.12g/cm3,拌入1kg大豆中,蒸煮1.5h,发酵温度为(30±2)℃,发酵6~8d。结论:优化的炮制工艺适合淡豆豉的炮制加工。AIM: To optimize the processing of Semen Sojae praeparatum,identify technological parameters, provide foundation on normalization manufacture and quality control of Semen Sojae praeparatum. METHODS: Single factor test was used,with the contents of daidzein,genistein and isoflavonids of Semen Sojae praeparatum as the indexs,to investigate the rate of Folium Mori and Herba Artemisiae annuae,relative density of in soybean meal, cooking time,fermentation temperature,fermentation time,holding time and recooking time; orthogonal test was used with the content of total flavones as the index,to investigate decoction time,decoction frequency,water dose of Folium Mori and Herba Artemisiae annuae,thus specified the processing of Semen Sojae praeparatum. RESULTS:The optimal processing was as follows: 90 g Folium Mori and 100 g Herba Artemisiae annuae,addition of water about 18 times,decoction time for 3 times,1 hour per time,soybean meal extract of relative density for 1. 10-1. 12g/cm3,mix in 1 kg of soybean,cooking time for 1. 5 hours,fermentation temperature at(30 ± 2)℃, fermentation time for 6-8 days. CONCLUSION: The optimal processing is fit to the processing and production of Semen Sojae praeparatum.
