摘 要:采用食品级防霉剂双乙酸钠与山梨酸钾,通过复配制成复合型防霉剂,对高水分稻谷进行常规条件下不同防霉剂添加量保鲜效果试验,并同时做空白对照。结果表明:防霉剂施加量越大,粮食含水率越低,防霉效果越好。防霉剂对储藏初期稻谷脂肪酸值有一定的影响;储藏时间越长,效果越明显,在储藏90 d后,高水分稻谷脂肪酸值亦在其储存品质控制指标内。对其淀粉糊化特性分析后发现,复合型防霉剂是高水分粮食应急储藏较为理想的防霉保鲜剂。A combined mould inhibitor was prepared by using sodium diacetate and potassium sorbate of food grade.With different addition doses of this mould inhibitor,high moisture paddy storage tests under conventional condition were carried out and contrasted with a blank group without mould inhibitor.Results:The higher is the mould inhibitor dose and the lower is the paddy moisture,the more effective the mould anti-inhibiter is.The mould inhibitor has some effect on fatty acid value of paddy at the initial stage of storage,and the effect is more remarkable with extending of storage time;the fatty acid value of the high moisture paddy added with the combined mould inhibitor is still acceptable after 90 day's storage.The study on the starch pasting property of the 90d-stored paddy reveals that the combined mould inhibitor is an ideal measure for emergency storage of high moisture grain.
